The origin of the Piña Colada is debated. One popular story attributes it to the Puerto Rican pirate Roberto Cofresí, who allegedly mixed coconut, pineapple, and locally smuggled rum in the late 1700s to lift the spirits of his crew. A less exciting, but likely more accurate version credits bartender Ramón Marrero Pérez, who in 1954 created the cocktail at The Hilton Caribe hotel in San Juan. He intended it as a liquid tribute to the flavours of Puerto Rico — and he must have succeeded, as it became the island’s official national drink in 1978.
Our version, first served at the 2024 Northside Festival and refined for 2025, features intense notes of raisin and banana from Njord’s barrel-aged rum. Tangy pineapple and sweet coconut are joined by a herbal Campari twist, adding bittersweet resistance to this classic taste of tropical summer. Garnished with fresh mint, it's best enjoyed under a baking sun with hot sand beneath your feet — or wherever you usually like your rum cocktails.

3 cl Njord Ligalab Barrel-Aged Rum
0,5 cl Campari
5 cl Pineapple juice
1,5 cl Freshly squeezed lime juice
1 cl of Creme de Coco
3,5 cl sugar syrup
Fresh mint top for garnish

1. Fill a lowball glass with ice
2. Mix the ingredients in a shaker
3. Shake vigorously with ice until the shaker is very cold
4. Strain the mixture into the highball glass

The Njord Ligalab Barrel-Aged Rum is characterized by deep molasses notes, and lighter banana and figs notes. The aged result is a smooth, dry, crisp and genuine rum experience with a soft mouth feel and fine vanilla notes from the vanillin in the oak supplemented by herbal hints from the gin.
