Inspired by Northside Musicians
Lucky Lo and UNG-SKAB are two inspiring artists who performed at Northside Festival 2024. Our bar manager, Hannah Jerg, has translated these musical universes into two absinthe cocktails through conversations with the artists about their music. For Lucky Lo, the conversation distilled into keywords such as empowerment and the female body. She tackles heavy topics with light and has a strong connection to Mother Earth. UNG-SKAB bubbles with love, contrasts, the beach, and a strong sing-along feeling with a cocktail in hand.
Ung-Skab – Sol Gennem Regn
"Sol Gennem Regn" is a cocktail that beautifully captures the essence of a refreshing summer day. This drink stands out with its unique blend of herbal, citrus, and tonic notes. The initial hint of absinthe provides a subtle anise aroma, setting the stage for a complex flavor journey. Gin pairs harmoniously with the tart sea buckthorn juice and the sweet tang of tonic syrup, while a touch of fake lime adds a burst of citrus freshness.
What truly sets the "Sol Gennem Regn" apart is its texture and presentation. Topped with a delicate layer of tonic foam, the cocktail not only looks stunning but also delivers a light, airy finish that contrasts beautifully with the bold flavors beneath. The experience of sipping this cocktail is akin to feeling the first rays of sun breaking through after a summer rainstorm, offering both refreshment and a sense of renewal.
Fake Lime:
26 cl Water
9 g Citric acid
6 g Malic acid
0,2 g Tartaric acid
Tonic syrup:
10 cl Tonic
100 g Sugar
Tonic Foam:
6.6 cl egg white
4.5 cl tonic syrup
4 cl water
5 cl tonic water
3 cl freshly squeezed lemon juice
2 nitrous oxide cartridges (cream chargers) + siphon bottle
Cocktail:
0.75 cl Njord Distilled Northside Absinthe
3 cl Njord Distilled Comeback Quinine
1.5 cl Søbogaard Sea Buckthorn juice
2 cl Tonic syrup
1.5 cl Fake lime
Fake Lime:
1. Mix acids with water in a glass.
2. Stir until dissolved and transfer to a clear bottle
Tonic Syrup:
1. In a saucepan: Heat tonic and sugar over low heat until the sugar is dissolved.
Note: If your tonic is still fizzy, it can bubble up vigorously.
2. Remove the saucepan from the heat and let the syrup cool down in the saucepan.
3. Then strain it into a clear bottle.
Tonic Foam
1. Mix all ingredients in a siphon bottle.
2. Charge the mixture with 1 charger and shake thoroughly.
3. Then charge with the next cartridge and shake again.
4. Chill the bottle for at least 30 minutes before use. Shake before use.
Cocktail:
1. Rinse a coupe glass with the absinthe.
2. In a mixing glass, add gin, sea buckthorn juice, tonic syrup, and fake lime.
3. Stir with ice until very cold.
4. Strain the cold cocktail with a julep strainer into the coupe glass with the absinthe.
5. Shake your siphon bottle and top the cocktail with your tonic foam.
TIP: Test if the foam is firm enough on a spoon beside you before topping your cocktail.
This absinthe is made from distilled fennel, anis seed, wormwood, apple, anise hyssop and Cuban oregano from the distillery garden. The green colour derives from a gentle infusion of nettle from the Northside Festival site. The result is a delicate harmony between licorice-like and herbaceous notes on the top of a mild wormwood bitterness.
