The Tea of all Teas is an unusual hybrid between fresh acidity and oriental spices with clear notes of juniper berries. The starting point for this cocktail is a sweetened chamomile tea that then meets spiced and floral notes from our Distilled Happy Minds Kombucha Edition. The gin also contains elegantly acidic and fermented notes from the unique kombucha.
5 cl Distilled Happy Minds Kombucha Edition
3 cl chamomile ice tea: 250 g sugar, 1 l hot water and 500 g fresh chamomile (or 100 g dried)
1. Chamomile ice tea: pour the sugar, chamomiles and hot water together then mix until all the sugar is dissolved. Then leave it to infuse for two days. Strain it, so the liquid runs clear.
2. Pour the gin and chamomile ice tea into a mixing glass together with ice and stir.
3. Double-strain into a chilled coupe glass.

In this special edition, it is joined by a white tea kombucha with quince, developed with the fermentation lab of Michelin-starred restaurant Domestic. The result is a sweet and spicy gin with acidic complexity and explosive floral notes.
