About the cocktail

About the cocktail

In our Sydhavn Spritz, Southern Italy meets Aarhus’ Sydhavn in a single glass. Here, our LE•MON•SJÆL•LO takes the lead role, a liqueur where sun-ripened lemons and eucalyptus evoke Southern Italy, while Nordic notes of lemon verbena and lemon balm add a fresh Danish counterpoint. Combined with Italian prosecco and sparkling water, the result is a light, crisp and citrus-forward spritz with fine bubbles, balanced sweetness, and an aromatic hint of herbs. Perfect for a sun-facing terrace or as an aperitivo before dinner – just as an Italian would enjoy it.

The history of the spritz cocktail goes back to the 19th century, when parts of Northern Italy were under the rule of the Austrian Empire. Austrian soldiers stationed in the region were used to lighter beers and wines from home and found the local Italian wines both strong and intense in flavour. The solution was to “spritz” a little water into the wine to make it lighter and more refreshing — hence the name Spritz, from the German "spritzen", meaning “to spray”.

In the early 20th century, Italians began further developing the drink by adding local bitters such as Aperol and Campari. This laid the foundation for the modern spritz, which today is associated with sunny terraces, long summer evenings, and Italian aperitivo culture.

The Limoncello Spritz is a newer variation that has particularly gained popularity in the 2010s and 2020s as a sweeter, sun-ripened and citrus-fresh counterpart to the bitter Aperol Spritz. The combination of limoncello, prosecco, and sparkling water has made the drink popular in Southern Italy and along the Amalfi Coast, where limoncello already has deep roots.

If you prefer a lighter and more bitter-crisp aperitivo, you can serve LE•MON•SJÆL•LO with Fever-Tree Mediterranean tonic in a 1:3 ratio of liqueur to tonic in a glass filled with ice. The aromatic tonic enhances the liqueur’s herbal and citrus notes while adding an elegant, dry bitterness. The result is a fresh, light, and complex long drink with distinct Mediterranean references – perfect as an aperitivo without the heavier alcohol strength.

About the liqueur

About the liqueur

LE•MON•SJÆL•LO is Njord’s interpretation of the Italian liqueur classic, limoncello. Here, two gods and traditions meet: Bacchus, the Roman god of wine and intoxication, brings sun-ripened lemons and eucalyptus. The Nordic Ægir, beloved for his divine brews, contributes Danish green herbs such as lemon verbena and lemon balm.

Together, the ingredients, production method, and mythology create significantly more freshness, complexity, and depth than traditional limoncello.
