Mrs. Sling King is inspired by the Singapore Sling – one of the oldest cocktails in the world. First stirred up a few years before U.S. Prohibition, it was originally created as a way for high-society women to sip spirits in public while maintaining an air of elegance. It’s more than just another fruity drink – it carries the legacy of class and quiet rebellion.

With Mrs. Sling King, our festival barchefs and mixologists, Hannah and Mads, take up the mantle and give it a Nordic twist. Blackberry, rhubarb, and beetroot take centre stage, wrapped in a fizzy veil of Danish summer nights. A cocktail of contrasts – vibrant yet deep, sweet yet sharp – with that daring little twist that makes all the difference.

We call it "Mrs. Sling King" as a tribute to the original classy women rebels aching for a splash of gin without the scandal… and since we developed the cocktail for the NorthSide Festival 2025 in Aarhus why not include a not-so-subtle nod to an icon from the Aarhus music scene: Gnags and their hit Mr. Swing King. 

And yes – a cherry on top.

Sugar syrup

1 part water

1 part white sugar


Cocktail

3 cl Njord "This Is Not a Gin" Liqueur

3 cl rhubarb drink

0.5 cl beetroot juice

1 cl lime juice

4 cl pineapple juice

0.5 cl Campari

0.5 cl Averna Amaro

7 cl Fever-Tree Mexican Lime

2.5 cl sugar syrup

1 cape gooseberry for garnish

7 cl Fever-Tree Mexican Lime

2.5 cl sugar syrup

1 cape gooseberry for garnish

Sugar Syrup

1. Combine 1 part water and 1 part white sugar in a saucepan.

2. Heat gently until the sugar is dissolved.

3. Transfer to a bottle and refrigerate.

Cocktail: 

1. Fill a shaker with ice.

2. Add the liqueur, rhubarb drink, beetroot juice, lime juice, pineapple juice, Campari, Averna Amaro, and sugar syrup.

3. Shake vigorously until well chilled.

4. Strain into an ice-filled highball or large cocktail glass.

5. Top with Fever-Tree Mexican Lime and stir gently.

6. Gently separate the leaves of the cape gooseberry and twist them together. Make a small cut in the berry and place it on the rim of the glass.

The vibrant "This is not a gin" liqueur is inspired by the nature surrounding the festival site. Blackberries play a fruity and sweet melody, while cherry plum blossoms and read dead-nettle flowers follow with a soft floral chorus. Wild carrot seeds, carrots and stems of red dead-nettle join with deep, warm and earthy notes, as a base of juniper, coriander seeds, liquorice root, and lemon balm keeps the gin rhythm tight.
